Deglaze is a new marketplace for restaurant-grade surplus
ingredients.

The problem we are testing: fine dining kitchens
sometimes end a service with expensive product that is
hard to reuse fast enough � foie gras, truffles, dry-aged
cuts, shellfish, premium proteins, specialty produce.
Meanwhile ghost kitchens, caterers, private chefs, and
meal-prep operators often want better ingredients without
paying full distributor prices.

We are building a local matching layer so restaurants can
list surplus premium inventory and vetted buyers can
purchase it quickly at a discount. Sellers recover value
instead of writing product off; buyers get access to
higher-end ingredients for specials, pop-ups, limited
menus, and prep runs.
